I Wish I Found This Genius Hack for Saving Leftovers Years Ago

If you’re anything like me, wasting food breaks your heart. Maybe you made too much lasagna or forgot week-old leftovers in the fridge (we’ve all been there), but being forced to toss perfectly good meals in the trash is a terrible feeling—and not to mention bad for your wallet.

Since adding these sturdy silicone molds to my kitchen collection, however, I can honestly say that I’ve changed the way I look at leftovers. The simple yet genius hack makes freezing food more convenient and effective than ever. I even find myself reaching for them while meal-prepping, portioning out fresh bone broth, and baking miniature desserts.

I’ve spent years testing different types of food storage containers. Even the best ones can let you down when it comes to freezer burn, which causes food to lose moisture and develop a dry, tough texture. But when it comes to this silicone freezer tray, it’s a different story.

The molds are made using BPA-free silicone with an embedded steel frame, so they won’t collapse when filled. Plus, they’re oven-safe up to 415 degrees F and come with fill lines in cups, tablespoons, and milliliters. While they look similar to ice trays, they’re intended for all sorts of foods, like sauces, soups, and chopped veggies. All of the different portion sizes you can buy, ranging from 2 tablespoons to 2 cups, have equal overall tray dimensions—about 11.75 inches long and 5.75 inches wide—so they store easily while not in use. Popping the frozen food out of the containers is a cinch, though you may have to let the tray sit on the counter for a couple of minutes or run it under warm water. Both the tray and lid are dishwasher-safe.

Souper Cubes have tight-fitting lids that are secure enough to leave the entire tray in the freezer, but you can also move the food into freezer-safe storage bags (I use these ones) to reuse the molds right away. Because the portions are square, they’re easy to stack and organize inside the bags to free up precious space in your freezer. 

Besides leftover storage and meal prep, Souper Cubes are also great for keeping out-of-season produce on hand throughout the year. I bought a massive butternut squash at the farmers market a few months back to blend into a puree and store in my 1-cup Souper Cubes for soups, curries, and sauces. The smaller sizes are perfect for freezing leftover tomato paste or chopped fresh herbs. 

The company doesn’t stop with handy silicone molds—its recently restocked Souper Cubes stoneware is designed to perfectly fit frozen 2-cup and 1-cup cubes. That means you can freeze individual portions and heat them in the included baking dishes using the microwave or oven before serving them. They’re also convenient for defrosting frozen stocks or sauces. The updated Souper Cubes baking dish also has a snug silicone cover that allows you to readily store meals in the fridge, and the dishes nest for storage. 

I also love the No Mess Serving Utensils, the first product collaboration with the company’s Shark Tank investor, Lori Greiner. The serving spoon and ladle feature a thoughtful S-shaped handle that hangs off the side of your pot and stays cool to the touch.
