Matthew McConaughey’s Chicken Salad Recipe Is the Perfect Lazy Sunday Meal

We have plenty of Matthew McConaughey recipes that have quickly become our favorites. Cocktails, chicken wings, burger upgrades—there’s honestly too many to choose from. But one particular recipe from the actor took the internet by storm last November: his tuna salad recipe. 

The recipe has the typical tuna salad suspects like tuna, mayo, and some tang from a lemon and vinegar. But, of course, this isn’t a typical tuna salad. McConaughey’s version includes wasabi, chopped red onions, dill pickles, crispy jalapeño chips, apples, a touch of agave syrup, corn, and frozen green peas. The internet couldn’t stop buzzing about the recipe, so we even tried it ourselves. 

Since then, fans have been waiting with bated breath for another recipe from McConaughey—and now, they finally have it.

In an interview with Food & Wine, the actor shared that although he indulges in tuna more than anything else, he also makes “chicken salad all the time.” But he has a few tricks to make it the McConaughey way.

Rather than cooking smaller pieces of chicken, he prefers—and insists—that people roast a whole bird. “I’m not a kebab guy. I don’t like pieces of chicken being cooked,” he said. “I think…if you can cook a whole chicken…That’s much better than cooking just a breast or cooking just a wing or cooking just a chicken piece on the grill. It gets too dry the other way.” If you can’t roast a whole chicken, then snagging a rotisserie chicken from the grocery store offers a quick and just as delicious shortcut.

While you might be tempted to chop up the meat, McConaughey says don’t. Instead, pull it off the bone for a shredded texture. This allows for more dressing to cling to the meat compared to when it’s chopped. “That’s my favorite chicken salad—when it’s pulled off the bone, not chopped,” he said.

For the other ingredients, it’s essentially the same idea as his tuna salad. McConaughey recommends a base of mayo, olive oil, and Italian dressing. From there, the recipe can take pretty much any shape. As the actor explained, he and his wife, Camilla Alves, like to take what they have from their fridge and build the meal from there. “On Sunday night at the end of the week, you don’t order anything,” he explained. “You don’t have a planned dinner. You open up the fridge and everything that’s still obviously good, that’s in the fridge, that’s leftover, you get them all out. And you start to say, well, what kind of meal can we make out of this?”
