We’ve covered plenty of pickle ideas over the years at Allrecipes. One of our most popular recipes, though, is one you might not expect: pickle dip.

Our aptly named Magic Pickle Dip requires just three ingredients and a single step. There’s really no trick to it—the success of this recipe comes from its simplicity.

How To Make This Magic Pickle Dip

“People always request my pickle roll-ups but I never thought of making them a dip instead,” says reviewer hartsellem. “Now when I'm feeling lazy or don't have as much prep time, I make this dip.”

You only need three ingredients: cream cheese, pickles, and dried beef (the main ingredients in pickle rollups). To combine the ingredients, soften your cream cheese before beginning. Then, dice up dill pickle spears, and mix this with cream cheese and dried beef. When it’s fully combined, store in the refrigerator until ready to serve.

If dried beef isn’t available or not your thing, substitute your favorite kind of meat, like diced ham, pastrami, bacon, or salami.

What Is Dried Beef?

Dried beef, also referred to as chipped beef, is a dried, thin cut of salt-cured meat that’s pressed and sliced. Rather than being like jerky, dried beef more closely resembles salami, prosciutto, or any kind of cured meat you find on a sandwich or a charcuterie board.

The ingredient is generally sold at the grocery store in a jar, packed full of thin slices. The most famous use of dried beef comes from a common recipe served to U.S. soldiers throughout the 20th century called Chipped Beef on Toast.

While dried beef is not the most elegant form of meat, it’s economical, flavorful, and packed with protein, making it a great addition for appetizers or snacks—especially creamy ones like this pickle dip. The salty, dry texture compliments the cream cheese, and after you add pickles, the three flavors combine in a magical dip perfect for snacking or serving before the main meal.
