8 ounces protein penne pasta, such as Barilla® Protein+ (Plus)

1 pound kielbasa, cut into 1/2-inch coins

2 tablespoons butter

1 small onion, diced

4 cloves garlic, minced

1 1/2 cups broccoli florets

4 ounces button mushrooms, sliced

1/2 cup chicken bone broth

1 cup heavy cream
-
1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt
-
1/4 teaspoon freshly ground black pepper
Directions
Bring a large pot of salted water to a boil, add penne and cook until tender with a bite, about 7 minutes; remove from heat.
Meanwhile, add kielbasa to a skillet over medium-high heat. Cook until kielbasa coins are lightly browned. Add butter; when melted, add onion and sauté until softened, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds. Add in broccoli florets and mushrooms.
Pour in chicken broth, cover, reduce heat, and simmer for 5 minutes. Stir in cream, Parmesan, Italian seasoning, salt, and pepper.
Strain pasta and stir into kielbasa mixture. Serve immediately.
Cook’s Note
Other vegetables work well in this recipe, such as bell peppers zucchini, or summer squash. You may need to change simmering time.
