Honey-Rhubarb Syrup

  • 1 2/3 cups chopped fresh rhubarb

  • 2/3 cup honey

  • 2/3 cup water

  • 1 tablespoon grated fresh ginger

Green Tea Punch

  • 2 cups water

  • 4 bags green tea or 2 tablespoons loose green tea

  • 1 bunch fresh mint (about 1 cup), plus more for garnish 

  • 2 cups vodka

  • 1 cup fresh lime juice (from about 8 limes)

  • 2 cups chilled club soda

  • ice, as needed

  • rhubarb stalks, for garnish

Directions

  • For syrup, stir rhubarb, honey, water, and ginger together in a small saucepan. Bring to a boil; reduce heat to low and simmer, covered, for 15 minutes. Remove from heat; let cool completely, about 1 hour.


  • Strain through a fine-mesh sieve into an airtight container or jar; discard solids. Syrup can be stored in the refrigerator for up to 1 week.


  • For green tea punch, bring water to a boil in a medium saucepan. Remove from heat and add tea bags. Steep, covered, 5 minutes. Remove tea bags, or strain to remove loose tea. Let tea cool completely, about 1 hour.


  • Muddle mint in a large pitcher. Add cooled tea, vodka, honey-rhubarb syrup, and lime juice. Chill at least 30 minutes, or up to 12 hours. 


  • Add club soda to a pitcher and stir gently. Serve over ice and garnish with fresh mint and rhubarb stalks.

    For a single drink, fill a cocktail shaker half full with ice. Add 1 1/2 fluid ounces strong brewed green tea, 1 1/2 fluid ounces vodka, 3/4 fluid ounce Honey-Rhubarb Syrup, and 3/4 fluid ounce fresh lime juice. Cover and shake until the outside of the shaker is frosted, about 30 seconds. Strain into an ice-filled glass. Top with 1 1/2 fluid ounces chilled club soda. Place a sprig of fresh mint on your hand and clap it firmly to express oils. Add mint to glass.
